The birth of pineapple cake was mainly due to the abundant production of pineapple in early Taiwan. At that time, the economy was dominated by agricultural products and canned pineapple processing. It is still possible to see pineapple carvings as a representative image of the career on the mansion where the pineapple became rich. Therefore, the bakery industry is also trying to use pineapple to make Chinese pastries. However, traditional pineapple pie is larger and not affordable for everyone. In the early twentieth century, there was a pastry chef in Taichung, Yan Ping, who often brought his own "dragon and phoenix cake" to the city for sale. The original "Dragon Cake" was a large round cake with meat filling, while the "Fengbing" was filled with pineapple. Later, after the Fu Yan bottle was improved, the phoenix cake was reduced to the current delicate cake. Later, it evolved into a modern "pineapple cake" made with western-style pie crusts. This "combination of Chinese and Western" pineapple cakes are appreciated even by Westerners and gradually become one of the favorite souvenirs of foreign tourists.
